Շատո՝ գինիներ ֆրանսիական դղյակներից. «Փաստ»

«Փաստ» օրաթերթը գրում է

Երբևէ մտածե՞լ եք, թե ինչ է նշանակում Շատո (Chateau) բառը ֆրանսիական գինիների անվանման մեջ: Նման նախածանց կրում են այն գինիները, որոնց ստեղծման ողջ ցիկլը տեղի է ունենում մեկ կալվածքում, որի կենտրոնը դղյակն է (ֆրանսերեն` դղյակ` Chateau): Այս անվանումը արմատավորվել է Ֆրանսիայի կարևորագույն գինեգործական գավառներից մեկում՝ Բորդոյում, որտեղի ալկոհոլային արտադրանքը հայտնի է ամբողջ աշխարհում: Ավելին, ոչ միայն հայտնի է, այլև, կարելի է ասել, ներկայումս էլ հանդիսանում է որակյալ գինու միջազգային ստանդարտ։ Շատո գինիների պատմությունն իրականում սկսվել է միջնադարում, թեև Ֆրանսիայում գինեգործությունը սկսել է շատ ավելի վաղ: Բանն այն է, որ ֆեոդալական ժամանակներում Ֆրանսիայում գինեգործության հիմնական կենտրոնները վանքերն էին, որտեղ եկեղեցական ծեսերի կատարման համար մշտապես գինի էր պահանջվում։

Վանականները իրենց հողատարածքներից շատերն էին դնում խաղողի այգիների տակ, ներմուծում էին նոր սորտեր և աշխատում հները բարելավելու ուղղությամբ։ Այսինքն, այդ ժամանակներում վանականներն էին հիմնական գինեգործները: Բայց աստիճանաբար ազնվականները ևս սկսել են հողատարածքներ հատկացնել խաղողի տնկիների համար: Սկզբում խաղողի բերքն ու դրանից ստացվող գինին օգտագործվում էին սեփական կարիքների համար, իսկ հետո արդեն՝ նաև վաճառքի։ Գնահատելով գինու արտադրության առավելությունները՝ դղյակների տերերն սկսել են ընդլայնել խաղողի ցանքատարածքները և ավելի ու ավելի լրջորեն մոտենալ գինու արտադրության և պահպանման տեխնոլոգիաներին։ Աստիճանաբար ի հայտ են եկել պրոֆեսիոնալ գինեգործներ, մշտական ջերմաստիճանով գինու պահպանման մառաններ, կուպաժավորումներ և այնպիսի այլ մշակումներ, որոնք օգտագործվում են մեր ժամանակներում։

Արդյունքում, գինեգործության լավագույն կենտրոնները, չնայած այն հանգամանքին, որ անգամ արդեն դղյակները չկային, կամ մի քանի անգամ փոխվել էին դրանց սեփականատերերը, շարունակում էին ձևավորվել և զարգանալ խոշոր կալվածքների տեղերում: Այդ կալվածքներում ամեն տարի քրտնաջան աշխատանք էր տարվում կատարյալ ըմպելիք ստեղծելու համար, իսկ լավագույն տարիներին յուրաքանչյուր շիշ վերածվում էր գինեգործության արվեստի գլուխգործոցի։

Ֆրանսիական օրենսդրության համաձայն, նման գինեգործական կենտրոնները ունեն պաշտոնական կարգավիճակ և բազմաթիվ կանոններ, որոնք թույլ չեն տալիս խախտել այդ խմիչքների արտադրության ավանդույթները։ Հենց այդ ամենի արդյունքում էլ ներկայումս եթե մարդը ցանկանում է ուրախացնել իրեն իսկապես նուրբ խմիչքով, ապա ընտրում է Շատո Մարգո, Շատո օ' Բրիոն, Շատո Լատուր, Շատո Լաֆիտ-Ռոտշիլդ կամ Շատո դ' Իկեմ գինիներից որևէ մեկը: Դրանք թանկարժեք խմիչքներ են, բայց եթե պատկերացնեք նման գինիների հասնելու ամբողջ պատմությունը և այն, թե որքան ջանք է ներդրվել դրանց ստեղծման համար, ապա այդ գինու գինն այլևս այնքան էլ չափազանց մեծ չի թվա:
