Շամպայնի խցանի ճռռոցի ձայնը միշտ այնքան տոնական է հնչում։ Սակայն, եթե ցանկանում եք, որ ձեր Նոր տարվա կամ Սուրբ Ծննդյան բաժակը կատարյալ լինի, ապա շամպայնի աշխարհի առաջատար մասնագետի կարծիքով՝ շամպայնի բացման գիտական ​​եղանակ կա։

Ռեյմս-Շամպայն-Արդենի համալսարանի քիմիական ֆիզիկայի պրոֆեսոր Ժերար Լիժե-Բելերի խոսքով՝ շամպայնը բացելու իդեալական ջերմաստիճանը 10°C է։ Այս ջերմաստիճանում խցանը պայթում է մոտավորապես 50 կմ/ժ արագությամբ, և գինու համն ու բույրը լիովին բացահայտվում են։

«Շամպայնը ուղղահայաց բաժակի կենտրոն ուղղակիորեն լցնելը ստեղծում է տուրբուլենտություն, և ածխաթթու գազի փուչիկները արագորեն դուրս են գալիս խմիչքից», - բացատրում է պրոֆեսորը։ «Գազավորվածությունը պահպանելու և խմելիս ավելի շատ փրփրունություն ստանալու համար լավագույնն է շամպայնին վերաբերվել գարեջրի նման՝ գոնե մատուցելիս»։

Ի դեպ, գինու մեջ ճնշման տակ լուծված ածխաթթու գազը պատասխանատու է այդ բոլոր հայտնի փուչիկների համար։ Խցանի պայթյունը առաջանում է վզիկի ճնշման հանկարծակի անկումից, երբ գազը պայթում է մեծ արագությամբ։ «Ամենահետաքրքիրը գերձայնային հարվածային ալիքն է, որը ստեղծվում է, երբ գազը դուրս է գալիս շշից», - ավելացնում է Լիժը։
